Comment from people who have worked with galley, island peninsula, or L-shaped with work top in middle would be helpful, plus whether a walk in pantry is valuable. For most of the time, there will only be two of us at home, but we both like to cook, we are fairly sociable, and our family like to get involved when they are around. Sue, in line with what oklouise asks, maybe draw up a room plan with one of the online kitchen-design websites (at IKEA, Bunnings, Mitre10, etc.) and post a pic? Even outside of how it'll help people answer here, I've found them very good for planning & visualising in odd spaces generally (eg. kitchenette-with-laundry, pantry).

Teal sounds beautiful for your splashback, I love vibrant and bright colours in the kitchen - you never see them enough! I think your worries are right as well, dark carpet and a dark bench would be too much darkness - a lighter benchtop would work well with the other colours! Marble is a classic for benchtops, but depending on how you did the wood, it wouldn't look fake at all! What did you decide on doing?
