Or an alternative is to use an acrylic product like Corian or Hanex that has "non-visible" joins. We regularly use these options when a long streamlined result is sought...You'll get the simple plain/clean look, although these products are not "cheap" options

Glass in large expanses also can be arguably a bit cold/sterile, not to mention reflective but depends on the whole balance of the kitchen design and of course budget...

Is the longest sheet size for Decosplash 3600mm as opposed to glass that can be done in one piece at 4630mm long ?

The minimum sheet size is 600 x 1800 mm and the maximum sheet size is 1500 x 3600 mm, however two sheets can be joined for greater height or length.
