You need to contact the electrician to disconnect all electrical points and oven, BEFORE removing any part of your kitchen. If your cook top is gas, then you need to contact a plumber BEFORE removing oven, so they can disconnect gas and block off water.

If you are handy, then look into Kaboodle kitchens at Bunnings. IKEA kitchens.
If the island is just that, with no overhang and no appliances, yes 600mm is wide enough.

Once electrical, water and gas is disconnected, remove your kitchen cabinets carefully. These may be donated or sold on gumtree.
The electrician and plumber then need to be contacted to install the services for the new layout.
Cabinets installed, bench tops installed, appliances ready for electrician and plumber to come back and connect to the services.

If you are not handy, then a quote from a cabinet maker costs nothing.

Freedom and the good guys are not kitchen companies, they are retail furniture and appliance stores that have a kitchen division. You are always better to look at kitchen cabinet companies.

Thank you @dreamer for all the suggestions. So I guess the first stop for us would be the cabinet maker to get some quotes. Based on the above plans, would they be able to draw up the kitchen design for us or do they need professional plans given to them from the get go? Also will it suffice for us to tell them where we want the power outlets to be and what kind of stone we want on the benchtop, or will they have to liaise with the electrician and stone provider directly? Sorry if these are stupid questions, just trying to get my head around the process.

If you go with a kitchen company, they will organise everything for you. They will draw up plans, organise tradesman etc etc.
That is what you pay for.
And as oklouise has said. Do not start any demolition until you are sure of your final outcome.
Speak to the kitchen company. There may be things you can do, to reduce costs.

The kitchen company will listen to you, on how you use your kitchen, and power points etc would be placed as per your requirements. You can choose any colour scheme, bench surface, you would like. The kitchen company is there to make your dreams happen. And they know what they are doing and the timelines and tradespeople to make it happen.

Of course you can do this all yourselves. So if you have the time, do the research, and find out what is required. Then decide if you are confident to proceed.

Since your 4th question was "When do we contact electrician?" I think you need to do a lot of research and reading to do the renovation yourself.

Thank you @oklouise for your detailed response and proposing a plan! Just a couple of responses and questions regarding what you've mentioned:

- Agreed that we need a proper plan in place before doing any big kitchen renos. I've been doing research all day and have better understanding of how complex the process can be. I think a complete DYI kitchen will be out of the question for us, so we will shop around for builders and a cabinet makers to get a better feel of the costs involved

- Agree with leaving the 70cm wall, at least on the side where the fridge is. Spoke to my partner and we will amend our plans

- You mentioned that you like the stove location but think the kitchen is too shallow to have the stove and kitchen there. Can I ask why? I've seen a couple of examples where stove & island is 1 meter apart, which seemed to work.

- We unfortunately won't be able to have the dining table in front of the stove, as we won't have enough space to accommodate quite a large couch & TV in the remaining living space :( I'm still gravitating towards having an island, as I prefer some separation between kitchen & living space

Hi @dreamer, I've been doing research all day and see how complex the job can be with all different trades people that need to work on the project. It does look like a kitchen company would be the best solution, however after we initially visited a couple of them they all quoted approx. $30 to $40k hence why I wanted to see if there was a cheaper way of doing this. It seems the best solution is to get a couple of kitchen companies and cabinet makers over to quote the kitchen up and go from there?

@oklouise we are thinking of putting it in the right hand corner. Our living room is a bit awkward, especially with a 2.8M couch!

why not rearrange the lounge and dining table to feel how the spaces work before committing to an island which can always be decided last and why not have cabinets at the other end of the kitchen?
