Snookums, the thing that's odd about those assessments is that the backsplash is more or less similarly discolored compared to the countertop. If the discoloring was related to use, wouldn't the work surface show the effect much more? I mean, how much does a backsplash really get stained? That's what makes me lean toward the sealer or filler just yellowing over time, not related to actual use.
I'd be curious to hear the opinions of fabricators. Do you have the link to that other thread?

Yes, River White is a granulite, which is a high grade of metamorphism but not necessary foliated (although the lower right corner of your slab is foliated and could possibly be called gniess), and in your case, really dominated by the light-colored, silica-rich minerals. It looks like it's mostly feldspars.
That rock is porous, but is otherwise bulletproof. So it needs sealing and perhaps attentiveness around oils or red wine. My Mom just got River White but she's really careful so she's had no issues yet. Yours is a beauty - congrats!
