@Patricia Colwell says that same refrain over and over on this forum - hundreds of times - about getting polished stone counters. She is not correct regarding marble. Her experience is with granite, and she refuses to accept that marble is different than granite and that marble is better in a honed finish. Marble will etch - there is nothing you can do about that - but the etches show less with a honed finish. You already know that, since you had honed marble in your previous home.
I would switch fabricators, though I know that is difficult at this stage of your kitchen, and with you wanting your counters done. But damage to stone counters prior to delivery, or upon installation, is NOT acceptable. It doesn't matter that it's marble. Yes, marble will patina with use, but should have no damage prior to delivery or upon installation. That this fabricator has done this twice shows he is a very poor fabricator with poor quality control. If he cannot even deliver an undamaged stone, how can you be confident that he has fabricated the slab correctly with the correct measurements?
