I see you have 2 different plants.

I wanted to see how long stem was when you first got it. It looks like it was very short. That makes me believe plant needs more light. Rosette looks quite full, but it may have been stretching for more light. Stem is too long, and color may be bit light - hard to tell for sure from photos.

If my plant, I would cut it just above the wire (I marked with red):

I would prepare a well draining mix: using lots of perlite (or pumice if available) would help. Mix it in 1:1 ratio with soil, and it will drain much better. Mix should look like this:

Let cut top dry up (callus) for few hours, and after stick it into new and dry mix. Keep it in bright spot (not full sun) and do not water for at least a week or longer. If you keep it wet, it may start rotting - plant without roots can't take in water. Move it into better light after a while.

It may be better if you can keep it in a spot that receives lots of sunlight, so it will not grow so tall that fast.

You can leave bottom part (leftover stem with roots) in original pot, maybe it will keep growing new offsets. It may not, but you'll find out.

It is best to do beheading when plant is in active growth, usually late spring-early summer.

So move the plants to more sun. Cut, well filtering pot, and see what happens with the stem. Got it. Thank you so so much! You have helped a lot! I cant express my gratitude enough.

If you decide to cut, do not move to full sun immediately; wait a week or bit longer. After that, start moving to more and more sun every few days.
