Shop around for the best looking skew toilet you can find. Then use a good plumber to get the tidiest pipe work you can get. I don’t think you’ll be able to get it set in the wall because of the spacing but most plumbing shops have the toilet measurements online so you can check it out.

Can you get your carpenter/builder to build a box around the plumbing across the back of toilet suite to form a ledge? similar to this photo.

I don't need to build it out completely, as I agree this takes up floor space that I don't really have, but some kind of cover for the pipe is needed. I really don't want to spent thousands on a renovation to end up with an exposed pipe!

Could you post a sketch/plan of your bathroom, showing door an window/s ( and sill height from existing floor level )

With Autocad may be able to come up with a whole bathroom solution, rearranging floorspace
