Kitchen Redesign

Hello houzzers, we're redoing our tikchen this year and was looking for help on layout redesign ideas. The house is a 2 storey 120 year old villa with the back area including kitchen and bathrooms a later addition. Ceiling is 3.6m in the original house, 2.7m in the kitchen area. The house is on stumps so moving plumbing not a major. North is to the right of the floor plan - kitchen window faces west.
We're not wanting to extend the house - it's more than big enough already! Just wondering how better to lay out to make best use of the space. Would like to keep a family room as part of the kitchen and keep the main large lounge separate.
We wondered about turning the toilet room into a walk through pantry and putting the toilet room under the stairs. Also removing the wall between the small dining area and the kitchen - this is loadbearing so would require steel beams etc.
There's currently only two of us living here, possibly children in future and we regularly entertain large gatherings so need a large open kitchen area.
I've included a rough plan of what we'd wondered about doing but would be glad to hear people's ideas!
