How about butcher block instead? IKEA and the big box stores sell it for countertops, the price is decent, and you won't have as many issues with buckling, water damage, or what to do with the edge as you would with the ply. If the edges of the ply get wet, or if any seam around a sink gets wet, the plywood will "blow" and you will have to replace it all, anyway.

This project required a small renovation, where my clients wanted to create something simple and light, without costing a fortune. In the guest bathroom we were able to leave the plumbing as is and worked on replacing the WC, Shower and Vanity. In the laundry the area in the room behind the counter, storage area was pushed back allowing for a larger space within the narrow room. A new door was put in and a new window. Before: After: This extension of space allowed for the guest bathroom to be extended out as well to allow for a larger vanity and all round larger and more accommodating space. The counter top in the laundry is bamboo, the simple black tiles above and perhaps later down the clients will put up cupboards and shelving as suggested. Before: After: The light grey ceramic tiles on the floor replaced the dark ones that made the space feel small and cramped. It sounds like you've been through quite the rollercoaster with your building project! That's really frustrating to hear, especially when you had a vision that you were attached to. The materials will need to meet the requirements for the hearth for the woodburner you choose. They need to project a set distance forward of the firebox opening as well, unless you have a concrete floor or other fireproof material. The structure needed will also depend on the weight of the woodburner you choose. It will need to hold that weight and hold it against sideways loads for earthquake safety. If you want a thin looking one, you may need an engineer to design it.
