Need advice on finishing the wall behind a benchtop

We have just installed a new benchtop, and I want to have a smooth finish to the wall behind. Tiling on the wall will not work; there is tiling on wall for major wet areas, but this area is the other side of the kitchen with minimal wet work involved. I am attempting a paint finish on the gib wall right down to the back of the benchtop, but our builder is not impressed. Does anyone have suggestions for how this edge can be damp-protected without the damp protection being obvious? Is there a product like a transparent plastic edging that could be used? Or can I stick with a paint finish? I am looking for something (or some way) that the wall will look clean and smooth right to the benchtop back edge. Suggestions very welcome. Thanks, Kerry
