Roofing insulation

I am currently replacing my roof,
I have a 70s ultra low pitch roof (2 degrees) the current minimum is 3 and many roofing manufacturers recommend nothing below 5 degrees. The existing roof is brown built long run roofing, a common standing seam roof used in the 70s.
I have found in winter that there is condensation dripping off the roof underlay onto the insulation which is only a few centimetres below the roof. this massively reduces the R value of the insulation and causing mould to form on the ceiling. As it isn't drying out.
As I will be replacing the roof, roof underlay and support mesh and insulation are there any ways to stop this?
I am looking at thermocraft covertech 201
And placing cavity batterns between the roof and underlay to help dry it out, could some insulation be placed directly under the roofing underlay to stop condensation forming, in a way moving the dew point closer to the outside. Is there a product suitable for this?
