Kitchen waiting for its benchtops - can you use it?

Would you live in a house when everything is done except waiting on the stone benches to be installed? I had the kitchen install date as the date in my head we can finally move in but now been told benches could take another 2-3 weeks. I made another post about moving in before our house was ready which we decided to not do mainly because the occupancy certificate and insurance wouldn't be valid however now that both those issues will be sorted we are seriously considering moving in with an unfinished kitchen. Anyone have a pic of what a kitchen looks like without its benches. Is the kitchen useable? Can we put plywood over the time in interim? Any hints, tricks you can give please.
