Garden for along front of traditional bull-nose verandah.

Hi, we'd appreciate any suggestions for what to plant along the length of the front porch of our home in the South Island, rural NZ. We have a traditional bull-nose verandah with 5 supporting posts. Our home is made of Freemantle block. The garden is facing sun almost all day (apart from the first three hours). Exposed to hot dry wind in summer & frosts/snow in winter. Have had an escallonia hedge growing well with plants behind, but have taken hedge out as it grew too tall and leggy despite regular trims. The rest of the garden is cottage: roses, salvia, agapanthus, bog sage, hydrangeas, lady's mantle in etc. What type of low hedge would folk suggest replanting please? Which flowers/low shrubs etc. If we don't hedge...whatsort of edging would suit? Many thanks.
