Kitchen - tiles and wooden window frames

My husband and I bought an old wooden cottage this year (in NZ), with a kitchen from the 80s. We are wanting to update without spending a load of money.
I have a few questions for the kitchen and the first one is around what to do as a splashback and to cover how much of the space (? white tiles) and also what to do with the wooden window boarders and large window sill (no idea why it is so large!). Currently the wood is a bit damaged due to age and watermarks, and does dominate the kitchen. Should we keep the wood look or paint it or cover it e.g. with tiles? Also posting about pantry storage and laundry following this.
Any thoughts appreciated!
