Bullnose is important for giving your shower a finished look on the edges of all the wall tile, and for any door edging, insert box/shelves, or tub hop. Your other main options are to purchase a tile with a finished edge, use a rail molding (pencil, dental, rail, cornice), but doesn't work on the floor. Another couple of options for a professional installer would be to caulk the edge out very clean, or make a bullnose edge with a grinder, both tougher to accomplish. We'd certainly recommend it.
