I love the hardware on the drawers. Because of the convenient function of the upper cabinets, adding hardware would only provide finished detail to the clean look. If you were to add hardware I would use vertical mounting in a smaller scale similar to your drawer hardware. I'm also not crazy about non-traditional mounting locations so I would keep them located at a reachable height for accessibility.

You are so right white is never out of fashion. I would set your budget and then look at your options. If you plan to stay in the house for many years then spend to the top of your budget (if that is going to give you a life time of pleasure), if you plan on being at the home for only a short time / few years then I would go mid range so it looks lovely, will have good resale value but you can invest your well earned money to go towards something else as well. Obviously Marble / Granite is the top of the range but there are so many cheaper and very attractive options these days that look just as good.

Hi Davina, either way would look good, so don't stress about it too much. This is a similar set up to our kitchen and I went with A & B both tiled and haven't regretted it. It looks generous and is more practical. Tiles are best around food prep areas as they are easier to clean than a painted wall ... you think that the splash back is what gets the most dirty but the walls around it get their share of splashes as well. In terms of suggestions for tiles - we went with a white textured subway - boring I know, but classic. Using a darker grey grout to match your bench would look good.
