Have you found your current dark countertops difficult to keep clean looking? Some people complain that dark shows every smudge. What I don't like about the current look is the dark wall. The dark counter is fine. Maybe try soapstone.
Both of us did farmhouse sinks. If that is your style, the farmhouse sink really helps refresh these older kitchens and works with their more country style. I used the Kohler Whitehaven "short apron" style because it can be installed on a standard sink base - there is also a "tall apron" style.
You need to tie in your countertops with your tan and gray floor tiles as well as your golden cabinets. Stark white might be too much contrast though a creamy granite with tan, gold, and gray streaks could lighten your kitchen. Again, commentors need to see your entire space, lighting, walls etc. To get the best advice, photograph your kitchen from all four corners and show adjoining spaces.

Thanks for the extra photos. They're helpful because they show the expanse of the flooring and the cabinets. I definitely think a granite with cream background and some warm tan, gray, and gold like those I showed above with light backsplash is the way to go. As you can see the white appliances are too stark, so an all-white countertop wouldn't work.
Not to spend your budget for you, but an island with a cream base and same countertop would look great and add lightness to the kitchen--or a round kitchen table in wood with cream chairs could look great. You've got the space.
thank you. I'm finding it hard to visualize as I feel my flooring may be too dark for really light. any thoughts? I'm looking for a warm bright kitchen.
Maybe you need an interior designer to come in to advise you. There are multiple examples here that incorporate all your colors in a lighter way. If you have room for a cream island, added to cream, gray, tan granite, and light backsplash (or a round table in cream and wood), your kitchen will look much lighter and cozier.
