Reducing the cost of building? Building styles Cladding etc?

So we are considering another build in sunny Central Otago. Ideally we would really like to take much more of the project on ourselves and help to reduce the cost. We would like opinions on what ways we can reduce the cost without lessening the quality of the build. We are considering the option of getting a builder to build to closed in stage and we then complete the interior? Is this going to save us much?

Are there certain types of homes, styles or claddings which are signifcantly cheaper ie coloursteel cladding vs brick/weatherboard, barn houses, Monopitch, box etc?

Background: ln the past three years we have built 2 homes, through a local builder, standard homes, brick, gables/hip roof with weatherboard ends, tiled/wetfloor bathrooms/showers etc. Around 180-200m2. We are keen to have something different this time.

Hubby is an electrician by trade and is very handy/capable. We have builders in the family, but none that live close enough to be able to take on the full project.
